Erika Miranda's MERRYFIELD APPLE CAKE

Ingredients:

3 cups all purpose flour

3 eggs

2 cups sugar

3 cups diced, peeled apples

1 cup salad oil

1 cup chopped walnuts

1 teaspoon baking soda

cup raisins

1 teaspoon salt

2 teaspoons vanilla extract

 

Instructions:

  1. Preheat oven to 325 F. Grease well and flour 2 8-inch square cake pans.
  2. In a large bowl with mixer at low speed, mix well first 7 ingredients, constantly scraping bowl. Beat 3 minutes more and continue scraping bowl. Stir in apples, nuts and raisins.
  3. Spread in pans and bake for 1 hour. Cool and serve.
